Blood Orange Upside-Down Cake
3 cups blueberries (fresh or frozen)
3 cloves garlic
½ onion, diced
1 cup ketchup
¼ cup molasses
½ cup brown sugar
2 tbs Worcestershire sauce
2 tbs balsamic vinegar
2 tbs red wine vinegar
1 tbs smoked paprika
1 tsp garlic salt
1 tsp garlic powder
1 tsp oregano
½ tsp cinnamon
Dash of cayenne pepper
Pepper to taste
1 tbs olive oil
In a medium saucepan, heat oil and cook the onion and garlic until softened. Add all remaining ingredients and simmer over low heat for about 30-45 minutes, stirring occasionally until sauce is reduced and thick. Puree until smooth in a food processor, or use an immersion blender. Store in the fridge for up to a week, or preserve properly in sanitized mason jars.
