Baked Feta Pasta
A simple, quick meal that comes together in 30 minutes. Perfect for those weeknight meals.
Baked Feta Pasta with Morels and Olives
Block of feta
1/2 cup pitted kalamata olives
1 cup cherry tomatoes
1 cup rehydrated morel mushrooms
1/2 cup olive oil
1 tsp dried basil
1/2 tsp red chilli flakes
1 clove of garlic, minced
Salt and pepper to taste
Preheat oven to 400°F.
In an ovenproof pan, add a block of feta cheese, tomatoes, garlic, mushrooms, and olives. Drizzle with olive oil and season with basil, red chilies, and salt and pepper. Roast in the oven for 30 minutes. Cook your favourite pasta according to directions. Remove pan from oven, stirring ingredients into a sauce like consistency, add pasta and 2-3 tablespoons of pasta water. Stir and serve.
