Saskatoon Danish with Whipped Mascarpone Cheese

Who doesn’t love a crispy, buttery danish in the morning? Add some creamy mascarpone cheese and your favourite summer berry and you have something irresistible for the sunny mornings on the deck.

These danish look super fancy, but trust me they are easy to form and bake. You can watch the video tutorial on how to cut the twisted diamond shape here. I use store-bought pastry to keep things extra simple.

If you don’t have Saskatoons on hand, this recipe can be easily substituted for blueberries or blackberries.

Saskatoon Danish

  • 1 cup saskatoons, fresh or frozen

  • 450g pre-rolled puff pastry sheets (2 rolls)

  • 275g mascarpone cheese

  • 1 tbsp lemon juice

  • ¼ cup powdered sugar

  • 1 tsp vanilla

  • 1 egg, whisked

 Makes 18. Preheat the oven to 375°F.

In a medium bowl, whip together mascarpone cheese, lemon juice, powdered sugar and vanilla using a hand blender. Set aside.  

Cut pastry into approximately 3.5-inch squares. Working in batches, use a sharp knife, cut two ‘arrows’ on opposite sides of the square leaving two sides attached to the square. Flip the cut pieces across each other forming a diamond shape in the centre. Place pastry on a parchment-lined baking sheet. Fill each square with a tablespoon of mascarpone filling and top with a handful of berries.

Let the pastry chill in the fridge or freezer for 10 minutes prior to baking. Brush with egg wash and bake for 28-30 minutes until golden brown.
